Find out where they are, what they want to accomplish, which parts of math give them trouble and which parts they like. I usually start with some interesting puzzles/games to get a feel for their thought processes and ability to solve different types of problems.
High school and above.
Make sure you have a good rapport with them, that they have a plan for moving forward, and that they give you challenging but do-able problems to solve.
