I take my time to help students look the assignment over and then list a few topics they could write about that they feel they could write about strongly. After we write down the few topics they believe they could write about, we make a list of what about those topics makes it easy to write about; once the list(s) are made, I let them sit and talk about the topic to me, and once done, they put it into words for the assignment.
